Abstract:
Determination of the method of extracting lycopene compounds from watermelons using a variety of solvents has been
carried out in this research. The purpose of this research was to determine the optimum conditions for the comparison of
watermelon juice with a mixture of n-hexane, acetone and ethanol in the extraction of watermelon to produce lycopene.
This study uses a comparison variable F: is a watermelon bait or juice, S: solvent or solvent. F / S, 150 ml: 150 ml, 100
ml: 200 ml, 75 ml: 225 ml, extraction temperature T = 70◦C, and extraction time t = 90 minutes. The method used is the
liquid-liquid extraction method. Furthermore, the determination of lycopene levels was carried out using the UV-VIS
spectrophotometric analysis method. The results of this study indicate that the optimum operating conditions for the
extraction of lycopene from watermelon by using n-hexane, acetone, and ethanol mixed solvents are at an F / S ratio of
100 ml: 200 ml, in this condition the extracted lycopene is 8.72 ppm with a percentage 16.33%
